Grilled Mini Sweet Peppers with Goat Cheese

If you are looking for a healthy appetizer that will disappear before your eyes, look no further! This recipe is even easier if you are already grilling something. Throw the peppers on the grill before grilling the main course to give your guests something to munch on. I sprinkled a little herb-infused salt over these, and they were delish!

Spinach Artichoke Dip

I have always been a big fan of Spinach Artichoke Dip. I went through several recipes before I found my perfect version of this delicious dip. The recipe over at All Things Mamma is very similar to what I use, and the directions are exactly the same. My changed recipe is below, but I’m sure you can’t go wrong with either version. You can also make this in the slow cooker, which is a big plus.

I have changed the recipe slightly, and this is what I use:

  • 2 cups shredded Parmesan

  • 1 10oz box frozen chopped spinach, thawed & drained

  • 1 14oz can artichoke hearts, drained & chopped

  • 2 tsp minced garlic

  • 2/3 cup sour cream

  • 8oz cream cheese, softened

  • 1/3 cup mayonnaise

  • crushed red pepper flakes, optional

Bacon, Spinach, Green Onion, and Cream Cheese Tortilla Pinwheels

There are many versions of tortilla pinwheels out there, but these are my favorite. The bacon, spinach, green onion, and cream cheese are a great combination. Add in the extra flavor of ranch mix and you have a great appetizer. Yum!

Slow Cooker Little Smokies

Y'all, it doesn’t get easier than this. These little smokies are always a crowd-pleaser. Sometimes I leave out the vinegar and the beer, which makes it even easier! This recipe is also good to add to the cheeses and veggie trays, to add a little protein to the spread.

Firecracker Chicken Meatballs

My husband made these for a casual get together last summer and they were a huge hit. You can dial the heat up or down depending on your preference. Bonus points if you serve them on these cute bamboo skewers.

Warm Brie with Raspberry Preserves

This appetizer looks so fancy and yet, it’s so easy. Pick out a wheel of brie, unwrap it and pop it in the oven at 325 for about 20 minutes, until the brie is warm and bubbly. Plate brie and drizzle raspberry preserves over, and serve with crackers. I leave off the pecans, but feel free to include them if you like.

Caprese Salad Skewers

These little skewers are a beautiful take on a delicious classic. Building the skewers doesn’t take long and is a task that is easily delegated. Some recipes will tell you to reduce the balsamic vinegar yourself to create the drizzle, but the store-bought glaze is much easier and just as delicious!
